Mediterranean Turkey Patties
Serves 4
  • 1 lb ground turkey 
  • 1 T minced garlic
  • 1 c chopped spinach
  • 1/2 c bread crumbs
  • 1 egg
  • 1 T olive oil (turkey is so lean it needs a little fat)
  • 2 T chopped basil
  • 1/4 c chopped sundried tomatoes
  • 1/4 c mozzerella (I used fresh, but grated would be fine)
  • S&P
1. Mix all ingredients thoroughly.
2. Form into 4 patties.
2. Grill.

Talk about a half assed recipe. :)

Mediteranean quinoa
Serves about 6

  • 1 c quinoa
  • 2 c chicken stock
  • 1/4 c pine nuts
  • 1 T minced garlic
  • 1 c spinach
  • 1 diced roma tomato
  • basil
  • S&P
  • 1 T butter
  1. Pre-cook quinoa in chicken stock with 1 tsp salt.
  2. Heat a large skillet and add butter. 
  3. Once butter is melted add pine nuts and toast.
  4. Add garlic until aromatic.
  5. Add remaining ingredients, season and serve. 

I served these things with grilled potatoes and grilled zucchini, asparagus and mushrooms. The whole table was very happy. It was easy and left very little mess!



Slow Cooker Pulled Pork
Serves about 5


  • 1 lb pork shoulder
  • 1/4 c sugar
  • 1/4 c kosher salt
  • 1 T chili powder
  • 2 T cumin
  • 1 sweet onion
  • 2 jalapeños
  • 1 c water
  • 2 T veg/canola oil
  1. Slice sweet onion and jalapeño, put in the bottom of crock pot, cover with water.
  2. In a large skillet, heat 2 T oil.
  3. Mix dry ingredients into a rub and coat shoulder.
  4. Sear shoulder on all sides.
  5. Place on top of onions in crock pot.
  6. Cook on High 5-6 hours, on low, 7-8 hours.
  7. Pull meat out of crock pot and shred with fork, can be served with BBQ sauce, coleslaw and/or buns to make pulled pork sandwiches.

Apple Cabbage Slaw
  • 3 c. Shredded cabbage
  • 1 julienned apple
  • 1/2 thinly sliced red onion
  • 2 T apple cider vinegar
  • 2 T agave, or sugar
  • 1 T vegennaise or mayonnainse
  • 1/4 c greek yogurt
  • optional: 1 T poppyseeds 
  1. Julienne (matchstick size pieces) apple and thinly slice onion.
  2. Mix vinegar, sugar and mayonnaise, add greek yogurt and poppy seeds. This is your dressing.
  3. Mix cabbage, apples, and red onion in a large bowl.
  4. Pour dressing over and mix well. Refrigerate an hour before serving.
